Brayan Alvear's Juicy Passionfruit begins with a 24 hour pre-fermentation inside sealed bags, followed by five days of anaerobic co-fermentation with dehydrated passionfruit pulp. The coffee absorbs the fruit's character slowly and completely before ten days of mechanical drying locks it in. The result isn't flavored coffee. It's a bean that was transformed by the process itself.
